Grilled Vegetable Skewers

Ingredients:

  • 2 medium zucchinis, sliced into thick rounds

  • 2 bell peppers (any color), cut into 1-inch pieces

  • 1 red onion, cut into chunks

  • 1 pint cherry tomatoes

  • 1 yellow squash, sliced into thick rounds

  • 2–3 tablespoons olive oil

  • 1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)

  • 1 teaspoon garlic powder

  • Salt and freshly ground black pepper, to taste

  • Wooden or metal skewers

Instructions:

  1. Prep the Skewers:
    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.

  2. Prepare the Vegetables:
    Wash and cut all vegetables into similar-sized pieces for even grilling.

  3. Season the Veggies:
    In a large bowl, toss the zucchini, bell peppers, onion, cherry tomatoes, and yellow squash with olive oil, Italian herbs, garlic powder, salt, and pepper until evenly coated.

  4. Assemble the Skewers:
    Thread the vegetables onto the skewers, alternating colors and types for a pretty presentation.

  5. Grill:
    Preheat your grill to medium-high heat. Place the skewers on the grill and cook for about 10–12 minutes, turning every few minutes, until the vegetables are tender and have nice grill marks.

  6. Serve:
    Remove from the grill and serve immediately as a side dish or main course.
