Garden Fresh Pico de Gallo
Ingredients:
4 medium ripe tomatoes, diced
1 small white onion, finely chopped
1–2 jalapeño peppers, seeded and finely chopped (adjust to taste)
1/2 cup fresh cilantro leaves, chopped
Juice of 1 lime
Salt, to taste
Freshly ground black pepper, to taste
Optional Add-ins:
1 small garlic clove, minced
1 small cucumber, diced (for extra crunch)
1 small bell pepper, diced (for sweetness)
Instructions:
In a medium bowl, combine the diced tomatoes, chopped onion, and jalapeño.
Add the chopped cilantro and squeeze in the lime juice.
Season with salt and pepper. If using, add garlic, cucumber, or bell pepper.
Gently toss everything together until well mixed.
Taste and adjust seasoning as needed.
Let the pico de gallo sit for 10–15 minutes to allow flavors to meld.
Serve fresh with tortilla chips, tacos, grilled meats, or as a topping for salads.
